Recipe | South Tyrolean speck dumplings
Speck dumplings with herb butter
Ingredients:
500g stale white bread cut into thin slices
30g butter or oil
1 onion
6 eggs
4 tbsp parsley (possibly half chives)
250ml milk
200g bacon
Salt

Preparation:
In a large bowl, mix the sliced bread with half of the milk. Crack the eggs into a small bowl, beat well, add to the bread and mix well. The mixture should be well absorbed. Finely dice the peeled onion and bacon. Heat a pan, add the butter or oil and fry the onion until translucent. Then add the bacon, heat briefly and allow everything to cool slightly. Add the finely chopped parsley, onion and bacon mixture and a pinch of salt to the bread mixture. Mix everything very well. If the mixture is dry, add enough of the remaining milk to make the dumplings easy to shape. Moisten your hands with water and form the dumplings. Place the dumplings one by one in boiling water and simmer for 20 minutes.
Herb butter:
Melt the butter in the pan and add the finely chopped herbs at the end. E.g. sage, thyme, rosemary, parsley.......
